Sausage, Apples, and Potato Bake

Ingredients

  • Sausage
  • Apples (1 large or 2 small per serving)
  • Potatoes (1 per serving)
  • Brussels sprouts
  • Thyme, rosemary, sage, etc.
  • Butter

Instructions

  1. Preheat oven to 425°F.
  2. Parbroil potatoes cut into bite-sized pieces for 8 minutes.
  3. In a large baking dish, cook in this order: brussels sprouts, onions/sausage (get these ingredients soft/mostly cooked), then add potatoes, apples, leaves from 2 sprigs of fresh thyme with olive oil, salt, and pepper until everything is tossed together.
  4. Bake for 30 minutes.
  5. During the last 5 minutes of cooking, stir 2 tablespoons of cider vinegar into vegetables. Serve with dollops of grainy or Dijon mustard.
