Ingredients
- Sausage
- Apples (1 large or 2 small per serving)
- Potatoes (1 per serving)
- Brussels sprouts
- Thyme, rosemary, sage, etc.
- Butter
Instructions
- Preheat oven to 425°F.
- Parbroil potatoes cut into bite-sized pieces for 8 minutes.
- In a large baking dish, cook in this order: brussels sprouts, onions/sausage (get these ingredients soft/mostly cooked), then add potatoes, apples, leaves from 2 sprigs of fresh thyme with olive oil, salt, and pepper until everything is tossed together.
- Bake for 30 minutes.
- During the last 5 minutes of cooking, stir 2 tablespoons of cider vinegar into vegetables. Serve with dollops of grainy or Dijon mustard.
